Eclairs are delicious French dessert and I have made them from several different recipes but this one is the easiest for me. Don’t discourage if you fail from first time it has happened to me also.
The secret to this recipe is not to open the oven while baking and cooling the eclairs because they will not grow.
For the pastry
200ml water ½ teaspoon salt
125mg butter
200g flour
5 eggs
½ teaspoon salt
For the filling
500ml crème patisserie
200g sugar
5g of sugar with vanilla flavor or vanilla bean
For the glaze
150g dark chocolate
50g butter
In a pot on medium heat cook the water, butter and the salt until boiling then add the flour, mix it for 1 min andyou will get homogeneous dough that separates from the pot. Leave it to cool.
While the dough is cooling prepare the filling. Mix the crème patisserie, the sugar and the vanilla with a mixer then leave it in a fridge.
When cooled put the eggs one by one into the dough mixing the dough between putting each egg (don’t put the eggs all at once).
On a big baking pan put baking paper. With a spoon make not smooth balls from the dough and put them into the pan but leave a space between them because they will grow up during baking.
Bake in a preheated oven at 190°C for 25-30 min and leave them to cool inside.
For the chocolate glaze melt the chocolate and the butter on medium heat.
When all is done all you need to do is cut the eclairs on half fill them with the filling and put the glaze on top. Delicious.
