Quick and yummy week night pasta

Ok I know pasta is always quick and yummy but this recipe gets extra points for having avocado as a main ingredient! Also, it’s super adaptable to fit your taste buds and cravings – you could use any pasta type you have in your pantry – I used fusilli this time but I’ve made this recipe with spaghetti as well and it fits right in. If you’re not opposed to dish washing (I am!), you can throw in some sauteed mushrooms or roasted chicken strips. However, for a lazy week night, when you come home from work exhausted and starved to death, this 20min dinner will hit the right spot I promise 🙂

1 Package fusilli

1 Avocado

3 tbsp pesto

Lemon juice form 1/2 lemon

1 small yellow onion chopped

Grated parmesan cheese

Dried basil

Salt, pepper, garlic powder

Directions

  • Prep: 5 min
  • Cook: 15 min
  • Ready: 20 min

Boil the pasta in salty water. Drain it and put it aside.

In a bowl, mash the avocado with a fork to the desired consistency. It can be smooth or lumpy depends on your preference. Add the chopped onion, pesto, lemon juice, salt, pepper and garlic powder. Mix until all the ingredients are combined.

Serve a scoop of the avocado sauce on top of the pasta. Sprinkle with grated parmesan cheese and dried basil.
