One of the most known from the multitude of Mexican delicacies are certainly these Mexican sandwiches. The Quesadillas are a mixture based on grated cheese, meat, onion, chili sauce, tacos and tortillas (check our recipe for homemade tortillas). Perfect for true fans of spicy Mexican food and ideal in combination with the Mexican tequila or beer like Corona.
400g chicken breast
300g cheese
3 spring onions (chopped)
2 tablespoons olive oil
100ml tomato sauce
salt, chilli, parsley
Cut the chicken into thin strips, refine it with olive oil, salt and grounded chili. Fry in Teflon pan without adding oil, until meat is golden yellow.
Mix the chicken meat with tomato sauce, chopped onions, parsley and add 150g. grated cheese.
Sprinkle each tortilla with grated white cheese, then put ¼ of previously prepared mixture with chicken, again grate cheese and put another tortilla on the top. Do the same thing with the rest of the tortillas.
Heat each tortilla in a Teflon pan until all the cheese is completely melted. Cut them down on slices and serve.
