Еxotic And Yummy Hob-To-Table Moussaka

• 3 tablespoons fresh choped mint
• 200g feta cheese
• 2 tablespoons olive oil
• 1 large onion, finely chopped
• 2 garlic cloves, finely chopped
• 500g minced lamb
• 400g finely chopped tomatoes
• 2 tablespoons tomato purée
• 2 teaspoons ground cinnamon
• 200g jar chargrilled aubergines in olive oil, drained and chopped

Directions

   Heat the oil in a large pan. Fry the onion and garlic and until soft and add the mince then stir fry for 3-4 minutes until browned.

   Tip the tomatoes into the pan and stir in the tomato purée and cinnamon, then season with salt and pepper. Leave the mince to simmer for 20 minutes, adding the aubergines half way through.

   Sprinkle with feta and chopped mint.
