For the chocolate coffee beans:
100g. bitter chocolate
For the ganache:
100g. milk chocolate
50g. bitter chocolate
100g. sweet cream
1 tablespoon of coffee liqueur
For the cupcakes:
100g. coffee flavored chocolate
100g. softened butter
170g. self growing flour
4 tablespoons sweet cream
The chocolate coffee beans:
We are melting the chocolate using a steam.
With a cooking syringe we are filling up the bean moulds and we leave them till they get solid.
Preparing the ganache:
Chop the chocolate on very small pieces.
Put the sweet cream on a low heat but don't let it boil .
Remove the cream from the heat, add the chopped chocolate and stir until the mixture becomes smooth. Leave it to cool and then put the mixture in the fridge for about half a hour
Meanwhile prepare the cupcakes:
Preheat the oven to 180 °C
Melt the chocolate
With mixer stir the butter and the sugar until the mixture becomes creamy. Then add the eggs one at a time with 1 tablespoon flour. Once you get a nice smooth mixture, add the melted chocolate , remaining flour, and the sweet cream, and stir until the mixture becomes smooth.
With a tablespoon put the mixture in the cupcake mouldes. Every mould should be 2/3 field with the mixture.
Bake the cupcakes for about 10-12 minutes. Once they are baked leave them to cool.
Mix the cold ganache until it get dense , add the liquor and stir few more minutes.
Using a cooking syringe apply the ganache on the cupcakes and decorate them with the chocolate beans.
From this recipe you can get 12 cupcakes
