1 kg. potato
400 ml. sour cream
1 onion
2 eggs
150 g. chicken smoked ham (or bacon)
100 g. Parmesan
little parsley
little butter (or cooking oil)
Peel the potatoes, then cut into medium thick circles. In a big pot put water and boil the potatoes for about 15-20 minutes, depending on the thickness of the potatoes. They should not be too soft, because later we will bake them.
In bowl whisk two eggs, then add the cream, parmesan and most of the ham ( leave a small portion of ham for later). Stir well the whole mixture , and add little salt.
In a pan put a little oil and fry chopped onions until soften then add the rest of ham. Fry a few minutes.
Grease a medium-sized pot with a butter (or oil) , and arrange the potato circles (previously drained). Add the butter, ham, and then the sour cream mixture.
Stir slowly so the potatoes can absorb the mixture. Season with parsley and oregano (optional). Place the prepared mixture in a preheated oven at 200°C bake 15 minutes, then lower the temperature.
Check occasionally with a fork if the potato is soft enough. Bake until softened enough.
