Because of its soft structure, zucchini are very sensitive and perishable vegetables. Store them unwashed in a plastic bag in the fridge, but no longer than seven days. The slightest damage to its peel, very quickly lead to decay and deterioration.
400 g zucchini
75 g flour
40 g parmesan
1 bunch of chives
1 bunch of parsley leaves
1 egg
2 teaspoons oregano
salt
pepper
nutmeg
Oil for frying
Grate Zucchini on large grater, add salt and drain the juice.
In bowl, combine the eggs, flour, spices and parmesan. Chop and add herbs and the zucchini, stir and fry the patties in hot oil.
Place them on paper towel so it can absorb the excess fat and serve on a plate.
